Let’s talk chocolate.
No, not the waxy bar from the mini mart. I mean real chocolate. The kind that makes your eyes close involuntarily with the first bite. The kind that whispers sweet nothings to your soul and leaves you feeling kissed.
In celebration of World Chocolate Day (July 7) I thought a blog post is in order to give this glorious ingredient the spotlight it deserves, along with a quick guide so you don’t accidentally melt milk chocolate into your Bolognese (yes, that’s happened).
Dark Chocolate: The Drama Queen
Bold. Broody. Complex. Dark chocolate is the Cabernet Sauvignon of the chocolate world. The higher the cacao percentage, the less sugar and the more intense the flavor. Use it when you want to impress someone with your baking skills; even if you’re winging it! It is sublime in ganache, flourless cake, truffles, or a mousse that whispers “grown-up indulgence.”

Milk Chocolate: The Crowd-Pleaser
Milk chocolate is your fun, flirty friend who always brings a party snack. Creamy, smooth, and nostalgic, it’s the most approachable of the bunch. Use it when making s’mores, whipping up chocolate-dipped strawberries, or a classic pot de crème.
Chef Tip: Don’t underestimate it. Melted milk chocolate swirled into bread pudding? Yes, please!
White Chocolate: Not Technically Chocolate (But Still Invited)
Let’s get this out of the way… white chocolate doesn’t contain cacao solids, which means, technically, it’s the chocolate world’s “distant cousin” and not real true chocolate. Use it when you want sweet and creamy without the cocoa bitterness. Pairing with lemon, raspberry, or matcha.
Chef Tip: Use sparingly. It can hijack the whole flavor profile and is often too sugary sweet!
So, Which Chocolate Reigns Supreme? That’s like asking me to choose between wine and cheese. It depends on the mood, the dish, and the level of drama you want on your plate.
