Where It All Began

June always brings a certain sense of reflection. The seasons shifting, the year fully unfolding, and the feeling that something meaningful is on the horizon.

This year is especially significant for Chef Frédéric, as Lycée JBS Chardin in Gérardmer marks its 70th anniversary. This is the school where his foundation was formed. Where he ‘became’. Not only in culinary technique, but in discipline, pride, and the deep respect for hospitality that continues to define his work today.

The commemorative publication “70 Ans du Lycée JBS Chardin – Première Partie (1949–1970)” beautifully captures the lycée’s evolution from its modest beginnings to its lasting role as a pillar of culinary and hotel education. We are grateful to the author(s) and contributors who have preserved this history and spirit for future generations.

What makes Chardin so special is that it has always been more than a school. For Frédéric, it is a place of identity. It’s halls, kitchens, and classrooms, and the people within them, shaped his craft, his standards, and the way he carries himself in the world.

When we chose to celebrate our marriage in Gérardmer in September 2005, it was important to him that the lycée be part of that week of events. The school graciously hosted a reception for us in the days leading up to the wedding. A gesture that reflected the warmth and community Chardin has always represented. It remains incredibly emotional for me, as I felt brought into the fold of my new life and culture.

This September, Frédéric will return once again, this time to take part in the lycée’s anniversary festivities. It is a full-circle moment. One rooted in gratitude, legacy, and the enduring importance of the places that shape us.

Some institutions educate. Others become part of you.
